Native to the Mediterranean, the Chrysanthemum Coronarium is also known as the ‘chop suey green’, ‘shungiku’ or ‘crown daisy’ and belongs to the daisy family. An edible green flowering plant, it is popular in many Asian cuisines, and the leaves can be eaten raw or cooked.

Reaching up to 15cm tall when leafy and up to 90cm tall when flowering. Leaves are bipinnate and serrated, and a blue-green colour up to 7cm long. Flowers appear as single flowerheads, yellow, up to 5cm across, and bloom from spring to summer.

Will succeed in ordinary garden soil, but prefers well-draining, fertile soils and light shade during the summer. Prefers temperature range of between 10°C to 16°C and will not grow well in temperatures above 25°C, where  leaves willbecome bitter the h otter the weather.

Harvest leafy greens earlier rather than later - up to 4-5 weeks after sprouting. The longer the leaves are left, the more bitter they will taste.

Open flowers and unopened flower buds can be used to make a herbal, aromatic tea, and can be used both fresh and dried.

Leaves can be eaten raw and taste excellent in salads with Asian-style dressings; alternatively they can be stir-fried for an extra burst of flavour!
